Turnip Stir Fry with Beans Turnip Stir Fry with Beans

Grab some bright turnips from River Queen Greens and fresh beans from Johndales Farm and you have this flavorful, vegetarian turnip recipe on the table in less than 30 minutes!

Ingredients
  • 1 tbsp olive oil 
  • 2 turnips - scrubbed, trimmed, & diced
  • 3 cups spinach or greens of choice 
  • 1 1/2 cup of fresh beans
  • 1 tbsp ginger - finely chopped
  • 2 cloves garlic - pressed or minced 
  • 1 tbsp honey 
  • 1 tbsp rice vinegar 
  • 2 tbsp soy sauce (use tamari- gluten free) 
  • 1 cup brown rice - cooked
Directions
  1. Prepare rice & set aside. 
  2. Heat olive oil in a large skillet over medium heat. Add the turnips & cook, stirring/flipping occasionally, for 8-12 minutes or until lightly browned & tender. 
  3. While turnips cook, whisk ginger, garlic, honey, rice vinegar, & soy sauce in a small bowl. Add spinach, white beans, & sauce to skillet. Cook for 4-6 minutes or until spinach is wilted & stir fry is heated through. 
  4. Serve warm over rice & enjoy. 
  5. Store leftovers in airtight container in the fridge for 2-3 days.
