Roasted Green Garlic

One of the earliest Spring harvests to appear at the market and remain through May is green garlic! Indulge in the delightful combination of roasted green garlic, toasted baguette slices, creamy goat cheese, and a sprinkle of fresh spring herbs like dill. It's a simple yet clever way to savor the flavors! This dish is perfect as an appetizer or as a delicious side to complement a juicy steak or a roasted chicken.

Ingredients

  • 8 green garlic bulbs
  • 1 tbsp. olive oil, or amount needed
  • ½ tsp. fine sea salt, or to taste

Directions

  1. Heat oven to 375 F. Trim garlic: discard roots and dark green stalk while oven heats. How "green" and young the garlic is will determine how much peel to remove.
  2. Lay trimmed garlic in a baking pan with aluminum foil large enough to fold over and cover. Lightly drizzle with olive oil. Sprinkle with salt.
  3. Cover with foil. Roast for 30 minutes.
  4. Remove foil cover. Continue roasting until tender and nicely browned, (~15 minutes).
  5. Serve it warm or at room temperature. Drizzle with extra virgin olive oil (optional).
