Eggplant

It’s the most wonderful time of year! Eggplant season is here! Call it eggplant, aubergine or brinjal - this globally cultivated veg can range from small to large, round to oblong and white to deep purple. Globe, Japanese, Graffiti and Fairytale are just some of the varieties now available at our markets. Eggplant is a high-fiber, low-calorie veggie with a meaty flavor and texture which makes it an excellent choice for a meatless main. It is antioxidant rich, and anti-inflammatory and shown to boost brain health! Roast one up for a savory baba ghanouj dip or check out our Recipe of the Week for a yummy Eggplant Parmesan. Ciao!
