Soupe de Pêches Blanches (white peach ‘soup’)
Simple and refreshing, this white peach soup makes for a pretty dessert or perfect treat on a summer afternoon. In honor of Bastille Day approaching on the 14th, this recipe celebrates the rich tradition of French cuisine while utilizing local seasonal ingredients. Market Manager Cristina Berthelot swears by this recipe to stay cool and laissez les bons temps rouler!
- 10 white peaches
- 1 organic lemon – you will need the zest (chopped into small specks) and the juice
- 300 g granulated sugar
- 200 ml white wine
- A small bunch of mint leaves
- 1 cinnamon stick
- 1 vanilla pod – slit lengthwise
Peel the skin off the lemon and slice them into tiny specks.
Plunge the peaches in boiling water for 10 seconds. Peel and cut them in half.
In a large saucepan, combine the wine, sugar, cinnamon stick, vanilla pod (slit & vanilla beans scraped off), lemon juice and lemon zest. Bring to a boil and add the halved peaches for 3 minutes.
Set aside to cool. Sprinkle with mint leaves, cover and refrigerate 3 hours minimum before serving.
The Crescent City Farmers Market operates weekly year-round in four New Orleans neighborhoods. The CCFM hosts nearly 80 local small farmers, fishers and food producers, and more than 100,000 shoppers annually.
