Savory Veggie-Fruit Parfait
Choose seasonal ingredients when preparing your next summertime snack. This time of year is peak season and CCFM markets are full of an abundant variety of fruit, vegetables, and value-added products! This three-ingredient parfait makes snack time or dessert a cinch - all of these items can be found at one or more of our vendors at any CCFM location. Want to mix it up with your own modifications? Try grabbing some pecans to sprinkle on top or adding blackberries for mixed berry goodness.

Ingredients
- Fat-free strained yogurt, 2 cups
- Frozen blueberries, about 3 handfuls
- Raw carrots, 1 small-sized carrot
Directions
Make carrot “sauce”: Place the raw carrot and ⅓ of the fat-free greek yogurt in a food processor or a blender, pulse it until you get a uniform color (light orange).
Assemble: Use a clear glass and start layering: add one-half of the yogurt, add a few tablespoons of carrot sauce. Add the other half of the yogurt on top.
Sprinkle some fresh blueberries on the top. The veggie-fruit parfaits are ready! Serve cold or frozen.
Note: You may choose other fruits in place of the berries. You can also use any other dairy product or dairy alternative product in place of the yogurt such as soy milk or coconut yogurt. You can also top off with granola or graham crackers - there are endless options here!
