Smothered Okra Tomatoes with Shrimp
This week, we are continuing our staff-favorite recipes with roots in the African diaspora! Next on our list is a savory Smothered Okra & Tomato Stew cooked with mouthwatering local shrimp from the market. You can enjoy this flavorful dish as a stand-alone stew or pour it over brown rice to make it a complete meal!

Ingredients
- 2 quarts fresh okra, sliced (Frozen will work if fresh is not available)
- 1 pound small to medium shrimp, peeled and deveined
- 4 cups diced tomatoes
- ¼ cup olive oil
- 4 to 5 cloves chopped garlic
- 1 cup diced onions
- 1 cup diced celery
- ½ cup diced bell peppers (yellow, green, or red)
- 1 tablespoon spice blend
- 4 to 5 large bay leaves
- salt and black pepper to taste
Directions
In a 4-quart saucepan, heat oil over medium-high heat.
Pre-roast okra on 350 degrees for 20-25 minutes or until the sliminess of the okra is almost gone.
Sauté, onions, celery, bell peppers and chopped garlic on a medium heat for approximately 15 minutes.
Add in okra. Stir in tomatoes and cook approximately 45 minutes, stirring occasionally.
In a separate pan, sauté shrimp and season with spice blend. Add shrimp (and its drippings) and to saucepan continue to cook for an additional 15 minutes.
Season with salt and black pepper to taste. Enjoy!
